Method
- Dump & Cover (No Prep Needed):Place the sliced pork butt into a pan.
- Add the soy sauce, sugar, cooking wine, and minced garlic (the 1:1:1:1 base). Cover with a lid and turn the heat to medium. Let the pork cook in its own trapped steam for 4–5 minutes.
- Slice in the Pan: Remove the lid and snip the pork into bite-sized pieces using kitchen shears.
- Evaporate & Caramelize:Keep the lid off and turn the heat up to medium-high. Stir occasionally and let the moisture naturally evaporate for 5 minutes or more until the pan is almost completely dry.
- The Honey Finish:Once the liquid has reduced, drizzle the honey over the pork. Stir continuously for 1 minute until every piece is coated in a sticky, glossy amber glaze.
- Add Crisp Onions: Turn off the heat, stir in the sliced onions, and toss. The residual heat will gently soften them while keeping their crunch.
- Garnish & Serve:Top with chopped green onions and sesame seeds. Serve hot over a warm bowl of steamed rice!
1:1:1:1 Ratio: Equal parts soy, sugar (or honey), wine, and garlic create a foolproof savory base every time.
Onion Hack: Toss in sliced onions after turning off the heat to keep them crisp and balance the rich glaze.
Notes
Zero Marinade Time: Cooking with the lid on forces the sauce deep into the thinly sliced meat without needing hours in the fridge.
