The Easiest, Crispiest Korean Scallion Pancake-Pajeon (No Skills Needed!)

One rainy day, one of my friends here came over to my house and absolutely devoured every last bite of my homemade pajeon. It was such a memorable moment! Since then, I’ve wanted to show them just how surprisingly easy it is to make at home, which is why I chose pajeon for today.

🛒 Ingredients

  • 2 bunches of Green Onions (Scallions) or Chinese Chives: The more, the better! Cut into pinky-finger length (halve thick ones vertically if needed).
  • 1 Onion: Thinly sliced.
  • Frozen Shrimp or Any Seafood: Amount and size to your liking.
  • The Batter:
    • 1 cup All-Purpose Flour (Whole wheat flour works well too!)
    • 3/4 cup Water
    • A pinch of Salt
    • 1 Egg (Optional)

💡 Golden Rule: The ingredients should completely overwhelm the batter! The batter should just barely coat the veggies and shrimp, not drown them.

🥣 Quick Dipping Sauce

  • 1 tbsp Soy Sauce
  • 1 tbsp Vinegar (Apple Cider Vinegar or any vinegar you have on hand)
  • 1/2 tsp Red Pepper Flakes (Gochugaru)
  • A pinch of Sesame Seeds (Optional)
  • Mix well

👩‍🍳 Step-by-Step Instructions

  1. Make the Batter: In a large bowl, mix the flour, water, salt, and egg until combined.
  2. Mix Everything In: Throw the cut green onions (or chives), sliced onion, and shrimp directly into the batter bowl and mix well.
  3. Pan-Fry: Heat a generous amount of oil in a skillet over medium-high heat. Once the pan is hot, add the pancake mixture and press it down evenly.
  4. Flip: Cook for about 3 minutes until the bottom is golden and firm, then flip and cook for another 3 minutes.
  5. The Ultimate Crispy Hack (Air Fryer): Transfer the semi-cooked pancake into an air fryer and cook at 375°F for about 5 minutes (adjust time based on thickness) for an unbeatable crunch!
  6. Serve: Slice and serve immediately with your dipping sauce.
